All that to say that you dont want to risk wrecking a $20-$30-$40+ dollar piece of meat.It should be 100% USDA grade A beef. I believe they're only 3.5 oz uncooked. This is correct. You go in and get a ten minute sales pitch trying to sell you the big packages. I bought just the rib eyes and was disappointed. They were probably about 1/4 inch thick, maybe less. .
